Colombo: a nucleus around which the diverse and complementary forces of men and nature revolve, in a cycle that follows the extremely long time scales of the geological formation of the soil and the extremely short period of cellular reactions, through the return of the seasons, the rising and setting of the sun, the moon and the stars.

The bouquet is fine and complex and it is expressed with floral scents of white pulp fruit. The taste is elegant and very savory, with great balance and excelent peristence. At sight, the wine is straw yellow with green reflections, the perlage is minute, tight and persistent. The production technique requires some steps, as a very soft pressing, then the alcoholic fermentation according to the Classic Method in the cool underground cellars of Colombo with subsequent stay on the lees, and lastly an ideal period of refinement in the bottle.

This wine, with great balance and excellent persistence, is only produced from Chardonnay grapes originating in vineyards cultivated in the high hills. Selected on the vine, harvested by hand in small crates, they undergo very soft pressing. The free-run must is subject to static clarification, followed by alcoholic fermentation at a controlled temperature (13-14° C) in stainless steel tanks. The second fermentation takes place in the bottle according to the Classic Method for around 80 days in the well-ventilated cellars of Colombo. Intense, decisive, profound and with great elegance, this Classic Method releases mineral hints and envelopes the typical notes of Pinot Nero: raspberries, red currants, red spring flowers. Its taste is finely balanced between body and freshness, with excellent structure. Silky and harmonious perlage on the palate, displays an interesting taste and minerality with protracted persistence. The dosage is soft and not aggressive.

In the Langa of Asti, from a high hillside vineyard with Miocene sandstone marl, the grapes harvested by hand in the 2011 harvest, processed through the slow and patient classic method, the Alta Langa Rosè Riserva 120 months, develops the depth that only time knows how to confer.
In 2011 we joined the Alta Langa DOCG protection consortium, guardian and heir of the great Piedmontese sparkling wine tradition of Canelli. With the 2011 vintage we celebrate the beginning of a new chapter in the history of our land, and together we inaugurate the start of the Colombo Cascina Pastori project, aimed at valorising Pinot Noir in the Langa Astigiana.

Deep and with enveloping elegance, of exotic fruits, acacia honey and hints of minerals reminiscent talc and face powder, accompanies the fragrance of spring flowers in the bouquet. Well balanced between body and freshness, excellent structure, silky and harmonious perlage exalt flavor and minerality, with excellent persistence.

By name and by nature a fresh young vintage wine, an intriguing and decisive expression of Pinot Noir that enhances the most immediate characteristics of the grape, like violet, red flowers and strawberry. At sight this wine is brilliant ruby red. The Bouquet has hints of enticing mature small wild red berry fruits like cherry, bitter cherry and floral notes of rose hips.

Its name describes the spirit of the company: it evokes the willingness to undertake a new project, a new direction for wine production in the territory. With its intriguing floral attributes, it is a feminine wine, warm and harmonious, able to transmit soft sensations linked to a gentle but emphatic tannin, present but not overwhelming. The complex structure and persistence lead it through a fascinating evolution.

Our Reserve, only produced in the best years, bears a name of Latin derivation referring to Roman antiquity, when the interest of the Empire in the fineness of the grapes from Bubbio had already been noted. It represents the maximum expression of quality that can be obtained with our grapes: it is a very structured wine, with fine, smooth tannin, enveloping and elegant. This Pinot Nero, with its long ageing, conceals a balanced minerality and a delicate final freshness.
